Things I’m Loving Lately+20 Minute Weeknight Recipe

Happy Thursday! The first week of the 2021 has been eventful. It’s been a busy week work wise, and I think it’s going to be pretty busy for all of January. Aaron was in work for Austin yesterday (one of his clients is in Austin), so I held down the fort in Houston.

We replaced our office chairs with new ones. Luckily, I was able to give them away on our neighborhood Facebook group. They served us well, but it was time for an upgrade.

I made a cheese board. The “that’s what cheese said” board was a housewarming gift.

outdoor workouts

I did my workout outside the other day. Now that I work from home, I really need to make sure that I set aside time in my day to get outside. Luckily, the weather was in the 60s this week, so I was able to do my workouts outside.

Weight Rack | Garage Gym

I have been getting good use out of our garage gym. We had a cold front blow through yesterday evening that brought a ton of heavy rain, so I headed to our garage gym. (this is the cage rack we have). Lifting heavy weights is so good for maintaining my running fitness.

Brooks glycerin

Speaking of running, I’ve have been wearing Brooks Glycerin running shoes since I first starting running while I was in grad school. I like the Glycerins because they are considered a neutral running shoe, but they offer good ankle support. This year, they came out with their “run wild” prints, and I loooove them. If you know me, you know I can’t resist a good animal print. These beauties arrived in the mail for me last week. They are almost too pretty to run, but I’ll be hitting the pavement with them soon.

We got our Katchaleaf and katchakid pool cover installed just in time for all the rain to move through. These covers are so neat, and they are built really well. We love the fact that the katchaleaf prevents any debris from falling into the pool, which is especially helpful when Aaron mows our yard. The covers are anchored into tiny holes that are drilled into the ground around the pool. It’s easy to roll up too!

The neighborhood chicken, Heather, has been making the rounds. She lives in the corner house at the end of our street and gets out every now and then. She’s pretty friendly, and I always enjoy seeing her when we go on a walk.

And, I’ve been making some quick and easy meals this week! This dinner is so easy to make. Preheat your oven to 400 degrees. You’ll need your choice of broccoli, Brussel spouts, potatoes, onions and carrots. You can also swap for a bell pepper or butternut squash. Use whatever protein you like – this time, I used some chicken feta sausage. Pick your favorite. Drizzle with olive oil and season with salt and pepper. Pop in the oven for 20 minutes!
