Tuesday Things+Inspiration for 2022

Happy Tuesday. Did anyone watch the season premier of The Bachelor last night? I sure didn’t. I have a bit of Bachelor fatigue. There was Matt’s season, Katie’s season, Bachelor in Paradise and Michelle’s season all in the span of 12 months last year (you can read recaps here). While I am curious about Clayton’s season, I might start to tune in and recap after he starts weeding out some of the women. I don’t have the mental strength to sit through two hours every week staring at a bunch of faces I don’t recognize. So, the jury is still out on whether I’ll recap a bit later on in his season. Game time decision, my friends.

My day back at work was relatively uneventful. I still don’t feel 100% back in work mode. And, March is going to be quite a month. Long story short, but COVID ruined some work events that were scheduled earlier this year, and they’ve all been pushed to March for one heck of a big month. But I’m trying to embrace 2022 with some unbothered energy.

Goal setting in 2022

Speaking of, I’m not a big fan of making resolutions, but I am a proponent of setting achievable goals that I can accomplish throughout the year. I already know that this year is going to be a big year for work, so I don’t want to beat myself up if I don’t have the time to fulfill a lofty resolution. But, what I can do, is set some goals that I can accomplish.

One of my goals for 2022 is to cook one new recipe each week. I was in need of some new inspiration, and I’ve been really hitting the pavement treadmill these last couple of weeks. So, Aaron and I snagged Shalane Flanagan’s Run Fast, Eat Slow cookbook. And, I can’t wait to start recreating some of the recipes out of her book. I’ve been a big fan of Shalane for a long time now. I’m not nearly as fast or as athletic, but every girl needs some inspiration. And, I’ve followed Shalane’s running career for a long time. Her whole concept behind cooking – and fueling – for her races really resonates with both me and my husband. In a nutshell, it’s fueling with quality ingredients from every food group so your body is primed to perform and recover.

Another goal of mine is to actually run a race this year. I’ve embraced the peloton more than I thought I would, and it’s inspired me to train toward a goal. My legs feel good – and it’s been a while since I’ve run a race. One of my girlfriends called me this weekend to chat about doing a half marathon in March. It’s a hilly one that I’ve run before, and I’m not sure I’m ready. And, as I’ve mentioned before – my goals this year need to be priming me for success – not setting me up for failure. We might make a fun girl’s weekend out of it so I can watch her race this race and cheer her on. But, I’m on the lookout for a half marathon that I can run in the fall. My husband wants in on this action too. He’s one of my all-time favorite running buddies.

Houston tennis lesson

I want to keep up my tennis lessons. We had ourselves all of one lesson in December – holidays make everything crazy. But, I am committed to one time a week moving forward. It’s nice to be able to get out of the house after sitting in my home office all day working.

And finally, one of my goals that I’m looking forward to the most is reading more. I don’t want to set a book limit, I just want to read more (for fun). I love reading, I just found it hard to sit down and clear my mind enough to actually make it happen this last half of 2021. So, I’m finishing a book that I started last year this month, and who knows where my reading journey can take me in 2022? I’m happy to have you all along for the ride.

Since one of my resolutions is to cook one new recipe each week, I headed to Costco to stock up on some items last week. It had been a hot minute, and I wasn’t trying to battle the people of Costco during December. So, let me share what I found.

I needed some fruit, and the blueberries have been so good lately. I love putting them with my greek yogurt, or mixing them into a smoothie. And, while I’m typically a pink lady apple fan, I decided to go with these Envy apples, and they are delicious.

I didn’t each lunch before I went, so those Cheez-Its ended up in my cart. I was thinking they would taste more like an actual Cheez-It, but they don’t. But they are a tasty snack. I also stocked up on my favorite Autumn’s Gold granola (I love that stuff) and some Pita Chips that I needed to take to a Baylor watch party this weekend.

My favorite find was these Turkey Sausage patties. Each one has about 17 grams of protein, and you just pop them into the microwave for about two minutes.

My husband is a big fan! I also bought some chicken, some frozen fruit, some of my Waterloo and some of my favorite Cauliflower rice.
