Easy Weeknight Dinner: Stuffed Peppers

I’ve been in kind of a cooking slump lately. By the time I transition from work to home in the evening, it’s already dark outside (thank you time change). It’s left me a bit….. uninspired. Unfortunately, this has meant a lot of repeat recipes and some Chick-fil-A. But, when I was making my grocery list over the weekend, I added a new recipe to my menu: stuffed peppers. I had every intention of making these on Sunday night, because they take about an hour to make, but we got busy, so I made these on Tuesday night. Will be a repeat on my menu because they make for an easy weeknight (or weekend) dinner.

It’s worth noting that these take about an hour to make from start to finish. They are super easy to make (you can find some of my other weeknight recipes here). Here’s what you’ll need.

Southwest Turkey Stuffed Pepper Ingredients

  • 1 lb. lean ground turkey
  • 4 red bell peppers (halved)
  • 1 can of low sodium black beans (drained and rinsed)
  • 1 small can of diced jalapenos (drained)
  • 1 can of yellow corn (drained)
  • 2 tomatoes (chopped)
  • 1 sweet onion (chopped)
  • 3 cloves of garlic (minced)
  • 1/2 cup chicken broth or water
  • Handful of shredded cheese (whatever kind you like – I used pepperjack this time)
  • 1 tsp. cumin
  • salt and pepper to taste

  1. Preheat oven to 375 degrees.
  2. Sauté your ground turkey until it’s fully cooked. Season with salt and pepper.
  3. While the turkey is cooking chop your onion and tomatoes and mince your garlic.
  4. Halve your red bell peppers (remove tops and the seeds)

  1. Once your turkey is cooked, add in your onions, garlic, tomatoes, black beans, jalapenos and corn. Cook until the onions are translucent.
  2. Add in your cumin and stir well.

  1. Put your red bell pepper halves in a 9×13 pyrex.
  2. Fill each half with a scoop of the filling. I had a lot of extra filling, so I just piled it all on top!

  1. Add in your chicken broth or water to the bottom of the pyrex.
  2. Cover with foil and pop it into the oven for about 45 minutes or until your peppers are soft!
  3. Top with cheese when you take them out of the oven.
