Easy weeknight dinner: Cauliflower Gnocchi and Chicken Sausage

Happy Thursday, friends. We are one day away from Friday – woo hoo! It’s been a hectic week, so I’m ready for the weekend. We uncovered our pool last weekend, so I’m hoping we can get it all cleaned and ready for the season. I can’t wait. I want to share a super easy dinner recipe that is in my dinner rotation quite frequently. It’s for those weeknights where you don’t have a ton of time, and you don’t want to make a huge mess. You can make this all in one pan. Here are the ingredients you need for my Trader Joes cauliflower gnocchi and chicken sausage.

Cauliflower Gnocchi and Chicken Sausage Ingredients

  • Chicken sausage (I get mine from Costco, but any brand you like will be just fine)
  • 1 bunch of asparagus
  • I bag of Trader Joes cauliflower gnocchi
  • 1/4 of parmesan cheese
  • A couple of tablespoons of pesto
  • A drizzle of olive oil

How to make it

  • Pour a drizzle of olive oil in a saucepan. Add your frozen cauliflower gnocchi to the pan. Note: I do not follow the directions on the back of the Trader Joes bag. I like to crisp my gnocchi, so I sauté in my just in olive oil.
  • Sauté the cauliflower gnocchi over medium heat for about 8-10 minutes or until it has a light brown color and it is warmed through.

  • Chop your chicken sausage and clean and prep your asparagus (slice stalks into thirds) while the cauliflower gnocchi is cooking.
  • Remove your cauliflower gnocchi from the pan once it is finished. Add in your chicken sausage and asparagus.
  • Cook your sausage and asparagus over medium heat until warmed through (about 5-8 minutes).

  • Add your cauliflower gnocchi back into the pan once your sausage and asparagus are almost done cooking.
  • Finish the dish off by adding in pesto one tablespoon at a time until you are satisfied with the amount (I use about two tablespoons).
  • Sprinkle with parmesan cheese.

And done! This dish is healthy, delicious and ready in about 20 minutes. You only get one pan dirty, and you can have a hot meal on your table for dinner in less time than it takes to change out your “work-from-home” outfit to your “still-at-home-but no longer-working” outfit.
