Instant Pot Chili Recipe

Happy Tuesday, friends. I hope you enjoyed my Halloween weekend recap yesterday. I mentioned that I always try to make a chili for Halloween night, and I want to share the recipe with you today. Sometimes we have friends stop by – and this recipe makes plenty for guests. So, here we go!

Instant Pot Chili Ingredients

Here’s what you’ll need:

  • 1 pound of ground beef
  • 1 green bell pepper – chopped
  • 1 onion – diced
  • 2 cloves of garlic – minced
  • 1 15 oz. can of dark red kidney beans (drained)
  • 1 15 oz. can of rotel (I use the low sodium)
  • 1 15 oz. can of ranch style kidney beans with jalapeños (you can use the plain ranch style kidney beans if you don’t like spicy foods)
  • 1 15 oz can diced tomatoes
  • 1 15 oz can of tomato sauce
  • 1 cup water
  • 1 packet of McCormick’s chili seasoning
  • Optional: one bag of jalapeno Fritos – or really any Frito of your choice. You can also make cornbread, which pairs perfectly with this meal.
  • Toppings: diced red onion, sour cream and shredded cheddar cheese

Here’s what you’ll do:

  • Set your Instant Pot to sauté.
  • Sauté your ground beef directly in the Instant Pot
  • Add in your bell pepper, diced onions and garlic once the meat begins to brown
  • Once the meat is completely cooked and the onions are translucent, add the chili seasoning.
  • Mix well and turn the Instant Pot off of sauté.
  • Add your 1 cup of water.

  • Add in the Ranch Style Beans (not drained) and your kidney beans (drained) to the pot and mix together.
  • Next, dump in your diced tomatoes, tomato sauce and rotel. Do not mix together. \
  • Put the lid on your Instant Pot, set to seal, and set the pot to 10 minutes of manual pressure.
  • After the timer goes off, let your Instant Pot naturally release for 20 minutes.

  • Then release, stir and serve!

Top with your favorite toppings. Mine are jalapeño Fritos on the bottom, diced red onions, shredded cheddar, some greek yogurt and some jalapeños! Enjoy! This recipe takes about an hour from start to finish, and it’s well worth the wait. I won’t make my chili any other way. I dump and go, which makes it the perfect recipe for Halloween when I’ve got guests over or kiddos coming to my door.
