Instant Pot Cowboy Casserole Recipe + Wednesday Things

Happy Wednesday! It officially feels like Fall in Houston. We woke up on Tuesday to about a 30 degree difference from what we’ve been used to. It’s been in the 90s, and we got to enjoy temps in the 60s, with low humidity. It feels fantastic, and it’s officially soup weather. Now through the end of October Aaron and I are hitting the ground running. We have some incredibly busy couple of weeks ahead of us, so I’m just trying to stay in the moment, not let the list of to-do’s overwhelm me and knock things off my list one by one. There’s a whole lot of work stuff, and a whole lot of commitments that we’ve got on the calendar.

Making time

That being said, I’m trying to take time for some fun things too. On Monday, I got away from my desk at lunch to have lunch with a friend. And today, I’m meeting one of my mentors for coffee. I’ve said this so many times before, but it’s worth a reminder. Working from home – it can be incredibly easy to fall into a routine and to stay in. It’s hard for me to step away from my desk to make time for some of those personal commitments during my work day. I’m always glad when I do, though. And you know what, the work will still be there when I get back. Of course, my Spuds are home waiting to work right alongside me.

I’ve got a new recipe going in my crockpot today. I am trying out a squash soup for the first time today. There is all kinds of goodness in there, so I’ll let you know how it turns out.

Instant Pot Cowboy Casserole

You all know that I’m a big fan of the Instant Pot. I love that you can just use one pot to make an entire meal. There isn’t a bit mess involved, there are not a ton of different pots and pans involved: just one. You can make it, close the lid and forget about it while it cooks. I tried a new recipe out, and it was delicious, so I’ll share.

Ingredients

  • 1 pound of lean grass fed ground beef
  • 1 onion diced
  • 1 tablespoon better than beef bouillon
  • 1/2 teaspoon paprika
  • 1 and 1/2 cups water
  • 1 cup of rice – or your favorite grain
  • 1 15 oz. can of low sodium black beans
  • 1 10 ounce can of rotel
  • 1 15 ounce can of corn
  • 2 teaspoons garlic powder
  • 1 cup of Pace salsa
  • 1/2 cup shredded cheddar
  • 1/2 cup shredded Monterey Jack cheese
  • 3 ounces of French fried onions

Here’s what you’ll do:

  • Turn your Instant Pot to sauté and add in your ground beef to begin sautéing.
  • Add the onion and sauté until the onion is translucent and the beef is brown.
  • Add in your Better than Bouillon and paprika.
  • Pour in the water, mix together and turn off the sauté setting.
  • Add in your uncooked grain (I used rice).
  • Dump in the beans, corn, Rotten and garlic powder on top. Do not stir.
  • Put the lid on the Instant Pot, set the valve to sealing and set on manual pressure for 5 minutes.
  • Once the five minutes is up, let the Instant Pot naturally release for 10 minutes, then remove the lid.
  • Stir the ingredients well, stir in the picante sauce, cheese and top with the French fried onions.

Add in all the ingredients before you close the Instant Pot lid.

Top with your French fried onions after your Instant Pot naturally releases

Serve and enjoy! It was a hit, and it made enough to freeze half for an easy dinner another night.
