Weekend Edit + Three-ingredient snack idea

Happy Monday, friends. I hope you had a wonderful weekend. Why do the weekends always seem to fly by? This was the first weekend in a long time where I didn’t have to set an alarm. I had nothing concrete on my schedule, so I got to go at my own pace. I think we sometimes get so caught up on “being busy” that we forget to take time to just relax. My husband is a bit more introverted than I am. He is incredibly content with relaxing and hanging out just the two of us. And, while I treasure our one on one time, I also like a community. So, we are both working on that. There is a time and a place for a community, and also a time and a place for a bit of relaxation. But, I think this year has been a really nice balance so far!

Friday

Ya’ll – Friday was freezing here. I was so glad to be working from home instead of schlepping myself to an office and having to wrestle with my contraband space heater to stay warm (we all had them). Instead, I got to take my laptop by the fireplace and work fireside for the day. I mean – I’ve had worse work days. The Spuds love the fireplace also! 2022 is all about finding the simple joys in my days!

I didn’t make it outside more than 3 times on Friday, and it was to take the dogs out to the bathroom. So, Aaron decided that I probably needed to physically leave the house once I was done working, so he planned a little date night to go see Moonfall at Studio Movie Grill. I thought it was a cute movie, and if you are a Game of Thrones fan, John Bradley was one of the main characters! After we got back from the movie, we made some of my mint hot chocolate (I created my first Instagram reel), and we were in bed by midnight.

Saturday

I slept in on Saturday. It’s the one day a week where I don’t have to have an alarm, but the past few weekends, I’ve had something on Saturday that required me to get up early to get some stuff done. I needed a nice, uninterrupted sleep! Once we both woke up, we loaded the dogs in the car to try out a new coffee place, and it was delicious. I got a cappuccino.

Then, I headed over to H-E-B for a grocery pickup. I’ve started swapping out some of my usual items for healthier/more nutritious options. An easy switch for me has been swapping out my chicken broth for bone broth, which has more protein than the regular stuff. When possible, I try to get low sodium. And, if I’m doing pasta, I try to find semolina flour pasta or durum wheat flour.

While I out grabbing groceries, Aaron got to work hanging my Hapi Artwork in my kitchen. I love the final product.

I’ll do a better job at photographing it in better lighting, but it adds some color to that dining nook. By the time I was back from picking up groceries, the sun was out, so I grabbed the dogs to take them on a nice, long walk. Here’s Tex who was enjoying the sunshine after some cold days.

Now that I’m typing this out, I feel like I had a really busy Saturday, and it’s not wonder I was tired Saturday night. I did some breakfast meal prepping. As I mentioned above, I’m trying to make a few healthier switches here and there. An easy way for me to do that is to prepare and freeze some items in advance. Quick breakfast items have been a lifesaver because I’ve had some early morning meetings. But, I just have to pop meal pre-cooked meals out and heat them up quickly. I prepped some breakfast burritos. These had eggs, spinach, black beans and some mozzarella on whole wheat tortillas.

I wasn’t sure if the eggs would freeze well, so we tried them out Sunday morning, and they tasted just fine!

After that, I had to run to Costco to grab some necessities – and by necessities, I mean some of their Valentine’s items like this heart-shaped pasta.

Sadly, they were out of their Valentine’s macarons I’ve been hearing about.

By the time all that was done, Aaron wrapped up with his stuff, so we decided to have pizza night – and watch some Netflix. We did a re-watch of a bank robbery movie and called it a night around 11ish.

Sunday

Nespresso

Aaron didn’t sleep well Saturday night, so we opted to watch church from home yesterday morning. We had a bit of a slow start, and I had my Nespresso with some of my Common Grounds Secret Sauce blended with oat milk.

After church was over, we walked both of the dogs on a long walk – we went about two miles since the weather was so nice. Cali was so happy to be out and about! They slept well Sunday night.

When we got back, we were hungry for a little snack. So, I made us a quick little snack. I had purchased some figs for a recipe I’m making later this week, and I had thrown a baguette in my cart along with some goat cheese. You can have this snack ready to go in less than five minutes. You can use fresh figs or pears! So delicious and so simple.

After that, we headed out to buy a gift for an upcoming wedding shower (is anyone else on phase two of wedding season?). We grabbed some dinner out on our way home.

And, by the time we made it back, I needed to sneak in a quick Peloton workout to end my evening! My weekend was full of getting stuff done, but it was nice to go at my own pace and not be tied to a schedule. I hope you all had a wonderful weekend. I’m thinking ahead to next weekend’s Super Bowl – and Valentine’s Day. I’ll share some previous Valentine’s Day ideas later this week!
