Happy Tuesday. Hope you guys enjoyed my weekend wrap up post yesterday. Before I get into today’s post, I figured it’s my public duty to tell ya’ll to watch Squid Game on Netflix. We’ve had several friends tell us how good it is, so we started it this weekend. It’s pretty interesting – kind of like a very different take on Hunger Games! So, if you need a new show, this is the one. I would say that you have to get through the first half hour – and then it starts getting good.
And one last thing before I get into the rest of today’s post. Remember how I said that I’m using Tarte’s Awake Lip Mask because my lips have been so dry and chapped. It’s really a miracle worker. It’s kind of sticky, but it smells great, feels great and keeps my lips hydrated all day.
Work from home lunch inspiration
Now that I’m officially working from home for the foreseeable future, my lunch routine has changed significantly. When I was working in the office, I would sometimes bring my lunch or I would go out to lunch with my colleagues. Other times, I would take my lunch to walk over to the Main Hospital and grab lunch in the cafeteria. Those were my times to really reconnect with my why. Walking through the halls of our hospital – and watching patients and caregivers – it was a good reminder about why I do the work that I do. I miss those times the most out of my lunch routine.
Since I’m working from home – many of my lunches are spent with a quick trip to the kitchen – and back to my desk so I can get work done. And, it’s just way easier to eat something that we already have on hand. So, here are some quick and easy lunches I’ve been enjoying these days.
That’s a jalapeno cheddar bagel with some chicken salad and an apple!
I love using up my leftovers, and I’ve been doing that more than ever before these days since I’m actually home to make it happen. This was leftover taco meat that I turned into a quick taco salad one day.
During the summer, I loved making some lunch smoothies. This one had a banana, spinach, frozen pineapple, frozen strawberries, some chia seeds and almond milk!
You can’t ever go wrong with some nachos. I love H-E-B’s jalapeno salsa, with some sharp cheddar on blue corn tortilla chips. It makes for a very quick, very delicious lunch.
When I make my seared ahi tuna bowls (which do take a bit of time to prepare), I’ll make extra ahi tuna and refrigerate it so I can use it in a bowl the following day. You can find this recipe here.
Hello Fresh Lunch Inspiration
I recently ordered some dinners through Hello Fresh, and I was pleasantly surprised to see that they offered quick lunch options also. So, I figured I’d try one, and I added the pesto caprese sandwiches for two to my cart. I gave them a try last week, and they are definitely something I would order again if I’m ever out of lunch ideas.
All the ingredients come packaged in a bag. This one contained buns, arugula, tomatoes, mozzarella, nuts, balsamic vinegar and pesto.
I prepped the arugula mix.
Then, I chopped my tomatoes and mozzarella.
And then, I prepared the sandwiches. It took me less than about 15 minutes, and Aaron and I had delicious sandwiches that I otherwise probably wouldn’t have thought to make.
