Best Summer Watermelon Smoothie

With summer right around the corner, I’m always thinking about new ways to create refreshing beverages in the kitchen. It’s no secret that my husband and I are sparkling water aficionados, but I bet what you don’t know about us, is that I like to create smoothie concoctions to hydrate after runs, bike rides or days out on the water in our kayak. I love a good breakfast smoothie, but I wanted a new smoothie that would provide some great hydration during the Texas summers. So, I present to you my summer watermelon smoothie.

Here’s what you’ll need

  • Watermelon (about one cup sliced)
  • Strawberries (about one cup sliced)
  • Mint
  • Juice from one lime
  • Fresh ginger (I am a big ginger fan, so I slice of several chunks – but you can omit if you aren’t a fan)
  • 1 cup of coconut water
  • 2 cups of ice

Note, that was my first watermelon of the season, and it was delicious. I love to keep fresh watermelon in my refrigerator all throughout the summers. It’s a great way to hydrate!

Here’s what you’ll do

I want to make a quick note about the ginger. I know it’s not for everyone. It can be really potent, so I didn’t put a ton in. I peeled it, and put in maybe around 1 tablespoon chopped (I let my blender do the rest of the work for me).

  • I always put my watermelon and strawberries in first. Followed by the ginger and the mint leaves. Then, I squeeze my lime right in. Last, I add in the ice and the coconut water.

This is the brand I use, because it’s 100% coconut water. It doesn’t have any added sugars, as many of the coconut waters out there do. My husband also likes to drink them plain, but I prefer them mixed up with something.

  • Once all of your ingredients are in, you blend. You can add ice to achieve the consistency you prefer!

And, there’s the finished summer watermelon smoothie. It was refreshing – and I’ll be making it again! As a bonus, I can slice up any leftover limes I might have and mix them with some sliced strawberries for a lime/strawberry-flavored water.

It’s been raining here in Texas for the last several days, which is luckily, keeping the temperatures fairly low for this time of year. But, once we are in the dog days of summer, these drinks will be delicious. I might even mix in some vodka for a poolside adult beverage!

And, since I’m talking about summer beverages today – if you haven’t tried the summer berry Waterloo flavor – do yourself a favor and pick up a case. It’s delicious! I also love the coconut during the summer months as well!
