Easy weeknight recipe: Creamy Italian Gnocchi

Happy Friday, I thought it would be fun to share an easy weeknight recipe with you today. But, before we begin, I thought I’d share what has been going on in the Gomez household:

Yep, that pretty much sums up Aaron’s life right now. I’m putting some finishing touches up in our dining room, and I’ve been measuring away. This recipe takes about 15-20 minutes from start to finish. And, as I mentioned on Monday, this week has been absolutely crazy, and I’ve been pulling some late evenings. Quick recipes are my friend.

Here is what you will need:

  1. 1lb. of gnocchi (any flavor. Sometimes I use cauliflower gnocchi, this time I used basil, I’ve also used regular).
  2. 1 cup of fresh spinach
  3. 1 lb. Italian sausage (this time I went mild, but you can also do spicy)
  4. 1/2 cup sun-dried tomatoes
  5. 1/2 cup milk (I use oat milk, but you can use regular milk, almond milk, whatever type of milk floats your boat).
  6. Handful of parmesan cheese (a large handful).

Here is the gnocchi I used this time. I prefer to use cauliflower gnocchi, but I haven’t made a Trader Joes trip in awhile.

  • Cook your gnocchi and set aside (cook according to directions on package – this will vary based on the type of gnocchi you are using).
  • Brown your Italian sausage while your gnocchis are cooking.
  • Once the sausage is browned, add your cooked gnocchi into the same pan as the sausage. Add your spinach (I don’t chop my spinach because it shrivels up into tiny little pieces anyways).
  • Add in your sun-dried tomatoes and cheese! Stir to combine.

  • Over medium heat, add in your 1/2 cup of milk (of your choosing). Stir until everything is combined and creamy.

Done! An incredibly simple and quick weeknight dinner. If I can make this, I promise you can too. This is one of my go-to meals if I know that I’m going to be stuck at work late – or for those nights when you really just don’t feel like hanging out in the kitchen forever!
