Two easy Friendsgiving Recipes

Happy Thursday – we’ve got a Friendsgiving coming up this weekend, and I’ll be making my Aunt Moosie’s mashed potatoes. I’ll make them this weekend and share the recipe later next week so you can have it in time for Turkey Day festivities. This got me to thinking that I want to share a couple of recipes that are perfect for Thanksgiving week – or for cooler weather.

Pumpkin chipotle soup

This recipe is one of my staples that I try to make every year when the weather starts to cool down. You can buy the mix at World Market, and they have it year round. It takes about half an hour.

And, you only need four ingredients.

  • 1 soup mix
  • 1 can of pumpkin puree (not pumpkin pie filling)
  • 2 cups of milk (I like using 2% milk because it gives the soup a creamy texture. It’s a little too rich if I use anything with higher fat content)
  • 5 cups of water

  • Add your five cups of water and pour in the soup mix.
  • Once the mixture starts to boil, add in your canned pumpkin.
  • Once everything is combined, add in your milk. Stir until combined and serve.

I like to top mine with parmesan cheese. You can serve this with cornbread or even some pumpkin biscuits (which I’ll have to share soon).

Friendsgiving Recipe: Healthier Broccoli Casserole

Anyone else love a green bean casserole? I do. It’s one of my favorite Thanksgiving side dishes. It’s a side I look forward to my mom making every year. This recipe is a take on that – only a healthier version

You’ll need:

  • 2 cups of steamed broccoli
  • 1 cup of Greek yogurt (Fage is my favorite)
  • 1 can condensed cream of mushroom soup
  • 1 egg
  • 1 cup of shredded cheddar cheese
  • French fried onions
  • Preheat your oven to 250 degrees.
  • Mix the Greek yogurt, condensed cream of mushroom soup, 1 egg and cheddar cheese together.
  • Mix in your steamed broccoli, and pour mixture in an 8X8 pan.
  • Top the dish with French fried onions.
  • Cook for 25 minutes.

It’s super easy, and a great dish to bring for a Friendsgiving – or for your actual Thanksgiving Day. I can’t believe we are already talking about Thanksgiving – anyone else’s year just fly by? So much to be thankful for this year, friends. But I’ll hold onto all this gratitude for a post on Thanksgiving week!
