Four Easy Recipes for the Rest of your Week

Happy Tuesday, friends! I’m here today with four easy recipes for you to make for dinner this week. All should take you less than 30 minutes. I have officially reached the point of summer where I feel like, as adults, we should really get a summer break. Needless to say, cooking dinner isn’t at the top list of my priorities in the evenings these days. So, I’m here today with four simple recipes that you can make the remainder of this week for dinner, and they won’t be too much of a hassle.

Why. not treat yourself to a Taco Tuesday tonight? My favorite thing about taco night is that everyone can assemble their tacos however they like. I personally like to include guac as my base to kind of keep everything together. I always do the low sodium taco seasoning, and I like to top it off with some salsa of my choice! Quick, easy and you have a home-cooked meal in under 30-minutes.

Veggie Enchiladas

And, while you’re at it, why not make my veggie enchiladas one night also. If you’ve made them before, you know you should have some of that filling frozen. All you need to do now, is heat it back up, assemble your enchiladas, pop them back in the oven for about 25 minutes, and you have a meal!

Crockpot Ranch Chicken

There is nothing easier than a crockpot meal: Nothing. And, I love my crockpot ranch chicken recipe. So, while it takes longer than 30 minutes to cook, you can literally throw everything into the crockpot in less than 10 minutes. It takes about 4-5 hours to cook, but it’s super easy to prep and put together.

Here’s what you’ll need: 

  • 1 pound of boneless, skinless chicken breasts
  • 2 tablespoons butter
  • 1 packed of ranch salad dressing mix
  • 1 cup of chicken broth
  • 12 ounces of banana peppers (juice included)

Here’s what you do: 

Add the chicken breast into the crockpot, then add your broth, dump in your ranch seasoning and top with the butter and banana peppers and their juice. 

Set your crockpot to low and cook for 4-5 hours until chicken is tender enough to shred with a fork. 

Optional: add some broccoli in during the last half an hour of cooking so you have a veggie with your meal. You can serve by itself or you can cook some quinoa or rice to go with your meal. And, as a bonus, it makes more than one meal for two adults. I usually keep the leftover and serve over salads for my lunch during the rest of the week.

Cauliflower Gnocchi and Chicken Sausage

My cauliflower gnocchi with chicken sausage recipe is on my menu for Wednesday. It’s really the simplest meal to put together, and it’s healthy too. For all my Trader Joes fans out there, this recipe is for you. I personally really enjoy the different types of gnocchi that you can find in the frozen food section at Trader Joes. You throw in some chicken sausage, and a veggie, and it’s a winning meal. It’s super easy and super simple.
