It’s been a great week- I’m here today with some favorites from the week, and I want to share a healthier zucchini bread recipe. May is Employee Appreciation month, so I got to wrap up an hour earlier yesterday evening. I loved having the extra hour back on Friday-Eve. What did I do with that extra hour? I took a walk around the neighborhood because I had been sitting at my desk literally all day. I found this little gem for sale!
We bought in kind of an older neighborhood, so people are starting to come in and completely redo the houses. I love to see it, because we hope to recoup some nice value when we go to sell our place. I also had some time to schedule some “maintenance” appointments 🙂 I’m in desperate need of a facial, which I want to have done before we go to Mexico, and I needed to make a nail appointment as well.
I’m loving my new hair!!! I always joke with my co-workers that I’m going to need about a month’s notice before we have to go back in the office so I can get “office ready” again! That’s going to be such a transition.
One thing I’m loving this Friday, is that we finally chose a contractor to do the repairs on our house, and he gets started June 8. This weekend, Aaron and I have some paint colors to pick out and some light fixtures to buy! We also had a local mosquito company come and spray our yard this week because the mosquitoes were getting out of control. This was our first time trying them, but I haven’t had any near our front door since they arrived. We used Mosquito Joe for any local Houstonians. I’m going to have them come out a couple more times before I can make a decision, but it’s definitely an improvement over the amount of mosquitoes just lurking by our house a few days ago.
A Healthier Zucchini Bread Recipe
And, in the hour I got back yesterday, I decided to try a new recipe. I’ve been trying to cut back on my sugar intake in an effort to be healthier (and I definitely have a sweet tooth). And, I’ve been trying to make some better substitutions when it comes to sugar. I love a good banana bread and a good pumpkin bread, but I had some zucchini leftover from a recipe this week, so I decided to go with Zucchini Bread.
Here’s what you’ll need:
- 1 egg
- 1/3 cup coconut oil
- 3/4 cup of honey
- 1 zucchini grated
- 1 tsp. vanilla
- 1/2 greek yogurt (I used 2%)
- 1 and 1/2 cups flour (to sub you can also use whole wheat flour)
- dash of salt
- 1 tsp. baking powder
- 1 tsp. baking soda
- dash of cinnamon
Here’s what you’ll do
- Preheat your oven to 325 degrees and grease a regular long pan.
- Combine all of your wet ingredients (egg, coconut oil, honey, vanilla, greek yogurt and zucchini).
This is what your zucchini will look like grated.
- Mix your dry ingredients in with the wet (salt, cinnamon, flour, baking powder and baking soda).
- Mix just until combined and pour your batter in your loaf pan.
- Cook in oven anywhere from 45-55 minutes until the top is nicely browned.
This bread was so delicious, and I feel like it still satisfies my sweet tooth without adding in a ton of artificial sugar!
