Happy Wednesday to all! I’ve been MIA since this time last week – my apologies. I had a lot going on at work, and by the time Friday rolled around, I really needed to just take a bit of a break from technology. So, I listened to gut, I took a few days away from the computer, and by the time Monday morning rolled around, I felt much better about sitting in front of a computer screen all day. No shame in my game – and let this be a lesson to everyone – to take those breaks when you feel like you need them!
So, why don’t I catch you up on what I’ve been up to. I was chatting with one of my best friends last Thursday, and she was taking a mental healthy day from work. Which, good for her! She’s been burning the candle at both ends for a long time, and it finally caught up to her. She had a free day Friday, and I cleared up my lunch hour to meet her for lunch. The weather was fabulous, we sat outside, and we caught up on life. And, she and I both really needed that. I had some vegan, eggplant tacos – and took home a slice of (very not vegan) chocolate cake. Hey, it’s all about balance. It’s really easy to get in my routine at home, staring at my computer screen all day and (if I’m being brutally honest) spreading the professional part of me too thin, while sometimes failing to nurture the human part of me. After that lunch, I went home, got back to work – and made sure I have some lunches and coffees with colleagues and friends intentionally worked into my schedule over these next couple of months.
My house was in desperate need of a clean this past weekend. I just felt like I had clutter in my spaces. Part of that involved cleaning out the fridge – and doing something with those ripe bananas. Banana bread it was! We had a couple of slices and froze the rest. You just need to heat it up for about 30 seconds in the microwave.
We spent a lot of time outside this weekend – And Tex and Cali loved it. They have their big spay and neuter surgery on Friday. I am really glad we decided to wait the full 18 months to get this done. Many studies have shown that it’s more beneficial to wait until 18 months so their bone plates have a chance to fully mature, along with their hormones.
Speaking of cleaning out the kitchen….. I made a fresh batch of my cowboy caviar this weekend, too. It’s great to eat with chips, but you can also put this over your favorite grain – and add some protein if you feel like it. It makes a huge batch, and it’s so good.
And, because I’m all about the balance these days, I picked up this new Bluebell ice cream flavor this weekend at the grocery store. It’s up there as one of my favorites. We actually don’t keep a ton of ice cream in the house, but it’s been nice to have a sweet treat in the evenings this week.
Someone sent the Spuds a mystery package. Either that – or they figured out how to buy things off my Amazon account. These cute pumpkin cookies arrived at my doorstep yesterday, and they are a hit. I just need to figure out who sent them.
And, I grabbed a honey pineapple at the store this weekend as well. It’s so good. I love summer fruit, and I’m not ready to say goodbye just yet.
Even though I realize we are fully in October – and I’m fully delinquent on putting out my fall stuff and Halloween decorations – I still love a good summer fruit. This weekend, I’ve got it penciled in to decorate for fall – and Halloween.
I’ve also gotten in quite a few good Peloton runs over the last couple of days (excuse the completely mismatched outfit. I needed to move my body – and I grabbed the quickest items of clothing available). It’s been good for the soul to step away from the computer for a bit, but I’m glad to be back!
