Okay okay – my apologies for not doing a Bachelor in Paradise recap. We had a friend drop dinner off, and the dogs got in the pool for awhile. So it was kind of late before I started winding down for the evening, and I had some emails to get through. And friends, it just wasn’t going to happen. But I’m back here today with some super quick and easy dinners that I’ve had the chance to make with items from my Trader Joe’s haul the other day.

It’s easy to get caught in a dinner rut, and I needed some new options. Especially as we transition into some cooler weather, I need a change of pace. So, I got a bit creative and found some items for some dinners this week. Here’s the thing, each of these is just three items – and they are pretty healthy too!

Sweet Potato Ribbons with Turkey Meatballs

Ingredient 1: Sweet potato ribbons

Ingredient 2: Frozen turkey meatballs

Ingredient 3: A marinara sauce of your choice ( I used the creamy basil marinara)

Step 1: Sautee your sweet potato ribbons. I sautéed mine in garlic infused olive oil!

Step 2: Cook your turkey meatballs in the oven according to the package.

Step 3: Add your cooked meatballs to your sautéed sweet potato ribbons and add marinara. Combine until everything is warm.

Bonus: I added some goat cheese on top.

Not only does this recipe call for just three ingredients, it takes less than 30-minutes to make as well. That is a huge win on a busy weeknight.

Salmon Soba Bowls with broccolini

Ingredient 1: Vegetable and soba noodle stir fry kit

Ingredient 2: Salmon (I buy the BBQ cut fresh Atlantic Salmon)

Ingredient 3: Broccolini

Step 1: Prep and cook your salmon in 425 degree oven for about 20 minutes. I seasoned mine with salt, pepper and some chili pepper flakes.

Step 2: Sautee the vegetables and broccolini for about 3-4 minutes until softened. Slice the package the soba noodles come in, and microwave for 30 second intervals until warm.

Steph 3: Mix the noodles in with the vegetables and coat with the soy ginger sauce. Prep your bowls!

This meal takes just under 30 minutes from start to finish.
