Weekend things + A quick and easy meal plan

coffee cups

Happy Monday! I feel more prepared headed into the second work week of 2023. I’m back in my groove (for the most part), and the holidays are far enough behind us to start writing a new chapter for the new year. This weekend was all about taking our holiday decorations down and making way for a fresh, clean house for 2023. I was thanking the December version of myself that I didn’t get a ton of my Christmas stuff out this holiday season. While I miss the twinkle of our lights from the Christmas tree – and the overall festive vibe, I equally like having a fresh start – a clean slate if you will.

Here’s what we were up to this weekend

facial

Admittedly, I haven’t been feeling great over the last couple of days. My body has been trying to fight off a cold – and I’m trying to avoid taking any medication. Friday was probably the worst of it, so I just kind of took it generally easy. I set up shop at my desk – and quietly worked through the day. I was in bed super early on Friday night. I woke up feeling much better on Saturday, so Aaron and I got to work taking down Christmas.

facial

After I was finished with that, I went in for my monthly facial. Remember all that cold weather we had when we were in Wimberley for Christmas? Well, that took a toll on my skin, so it was in major need of rescuing. Myra did it again, and I’ve got all my appointments set to get me through April. I’m not sure when I’ll be able to get back in to see her once the baby is born, but I hope I don’t have to take too much of a break. My monthly facial is my “me” time.

neighborhood

A dog walk was in my cards once I was done with my facial, and the sky delivered. And because I was trying to take it easy, Aaron and I stayed in the rest of the evening to watch some Netflix. We watched a limited series called Keep Breathing. It was about 6, short episodes, and it was an interesting watch. I wish the ending were tied up a bit more.

Sunday

church

On Sunday, we stayed home to watch church, but we really need to get back in person next week. I love the convenience of watching from home, but nothing beats going to watch in person.

coffee cups

We enjoyed it with our new mugs that some friends got us for Christmas. It’s got both dogs on the mugs, and they are so cute.

baby monitors

After that, we needed to check some items off our baby to do list, which is really never ending. I like to be prepared, and I’m having a hard time feeling like I’m prepared enough. I finalized my baby registry this weekend, but I really needed Aaron to pick out our monitor. Too many options overwhelm me, so we went to go to some in-person research.

in n out

And, as a reward, we got In N’ Out for dinner. Don’t get mad at me here, but I was born and raised in California. So, I grew up going to In N’ Out. The Texas In N’ Outs just weren’t the same. It was nice to get my fix, but I feel like it’s just more fresh in California.

peloton

The weather was fabulous, so I did a dog walk to get my 10,000 steps in, and I followed that up with a Peloton walk with Matty Magiacomo. He’s one of my favorites to take a walking class with.

What we’re up to this week

This week is going to be packed. I wouldn’t say I have a case of the Sunday Scaries, but I certainly have some anxiety about my schedule over the next couple of days. The meetings are back in full force, friends. And, I’ve got my glucose test and an ultrasound later this week to look forward to! I always enjoy getting to see baby boy.

An easy meal plan

If you are having a hard time getting back into the swing of cooking after all that holiday food, let me help you. Here are three super simple dinners that you can make this week in under 45 minutes.

30-minute meatballs

They are so good – and so easy. In fact, they made it on my own personal menu this week, right alongside asparagus.

Ya’ll – this recipe is savory, it’s delicious and it’s the perfect easy recipe to make this week.

Veggie Enchiladas

If you’ve been reading here for any amount of time, you know that these are always in my rotation. In fact, it makes a double batch, so you can freeze half to thaw and make for an even easier dinner another time!

Enjoy!
