Five Easy Recipes This Week

Aaron and I have some exciting news to share tomorrow – and, as a result, we’ve been incredibly busy around here. Anyone else every need some super simple recipes that you can throw together in a pinch? I’m sharing five of mine today on the blog. Fingers crossed these can get you through the week. I’ve shared these on the blog before, but linking them separately. I outline all the ingredients you need and step by step instructions on how to make each recipe.

1. Crockpot ranch chicken

There is nothing easier than a good crockpot meal. It literally does all of the cooking for you. Prep time on this is like five minutes, and it cooks in the crockpot for about 4-5 hours! I can think of no better dinner on a busy Monday evening than my crockpot ranch chicken.

2. Cauliflower Gnocchi and Chicken Sausage

Ya’ll, the cauliflower gnocchi and chicken sausage is one of my favorite recipes. It’s a one-pan wonder, as I like to say. And you know my husband does not like having to wash a million dishes. This one takes about 20 minutes to make. So, if you need something quick and (not) dirty, this is the recipe for you.

3. Stuffed Peppers

If I were you, I might make my stuffed peppers for dinner this Wednesday! They take about an hour to make, but they are easy – and, you only have to get two pans dirty. And, most of that hour is cooking time – so you can just pop them into the oven and get some other stuff done while they cook.

4. Veggie Enchiladas

My veggie enchiladas are on heavy rotation around here when I start feeling like I need to tone down on the meat. This recipe makes two batches, so you can save half and freeze for later. They take about 45 minutes from start to finish.

5. Easy chicken pot pie

And, last but not least, here is the recipe for my easy chicken pot pie. While some might argue that chicken pot pie is not necessarily a summer dish, I think that pot pie is good year round. So, why not give it a try for dinner this week?
