Easy Weeknight dinners

I’ve been a little discombobulated and not feeling the whole cooking thing ever since we got the news about Sawyer. I’m honestly just trying my best to stay focused at work, because I have an incredibly busy next two weeks.

By the time I wrap up my work day, the last thing I really feel like doing is cooking. And I definitely don’t feel like making a big mess in my kitchen.

In fact, I even procrastinated on making dinner last night by pruning back our freeze-dried orange tree: RIP. I’m not sure if it made it ya’ll!

Wow – just went off on a major tangent. All that to say, that I have been doing some very simple dinners that don’t require a ton of pans – and don’t make a whole bunch of a mess. Here’s what we’ve had on rotation.

Creamy Italian Gnocchi

Super simple and it takes about 15-20 minutes from start to finish. You can get the recipe for that here.

Salmon and Veggies

This takes about 25 minutes to prep and cook. This might be the easiest meal ever. I prep and wash my veggies (you can do Brussel sprouts, broccoli, asparagus, whatever floats your boat) and stick it all on one pan at 425 degrees for about 20-25 minutes.

Bonus: Sawyer loves Salmon, so we’ve been making some to mix in with his dog food this week. His appetite seems to be back, but it’s still nice to give him some added protein.

Zucchini Boats

I made my zucchini boats last night. They are little more involved, but still take about 30 minutes total. You can find that recipe here. H-E-B gave me some pretty big zucchinis in my grocery order, so those will probably be leftovers for tonight.

This might be another one of the easiest and quickest meals to make. You need anywhere from three to five ingredients for this recipe – and about thirty minutes.

  1. Chicken sausage (or any sausage of your choice)
  2. Onion
  3. Broccoli, carrots, potatoes, brussel sprouts, etc… (really any veggie of your choice)

Heat your oven to 400 degrees. Mix your veggies in some olive oil, salt and pepper. Pop everything onto one pan – and bake for about 20-25 minutes.

Look, I get it. We get busy. Some of you have kids. Some of you have full-time jobs. And for some of ya’ll, cooking just isn’t your thing. Are these gourmet meals? Absolutely not. But, they allow me to put mostly healthy meals on the table quickly in the evenings. These meals mean less clean up – and more time I can spend with my family. And you just can’t beat that.
