Thursday brain dump

It’s my Friday today!!! I took tomorrow off to check something off my list that I’ve been looking forward to for awhile. I’m also getting my monthly facial. Ending my week on a high note. I’m also trying to knock a couple of other items off my list this weekend in preparation for Halloween.

It’s warming back up here in Houston (and it’s not like it ever got really cold), but if you are in the need of some Fall dinners, look no further. I have some delicious – and simple – fall dinners you can make this weekend.

What about some of that Instant Pot jalapeno cheddar chicken? I made this for the first time a couple of weeks ago, and it did not disappoint. It’s a great recipe for the weekend because it does take a bit longer to make. I had a ton of sauce leftover, which I froze. I was able to use some of that over some chicken enchiladas as the sauce last week.

It’s officially football season! I’ve got my Fantasy Football lineup situated for tonight’s game. And, you know what would go really well with football? My Instant Pot Ribs. So delicious and so easy.

The puppies are on the mend, which I’m so grateful for. They’ve perked up and have a lot of their energy back. I think we are through the worst of it. Now, I’m washing alll the things. I’ve also received some helpful advice to continue supplementing their food with probiotics and pumpkin. So, I’m giving both of those things a try to help get them back to feeling 100%.

Helpful work tips

For my working friends out there – we are sitting in that weird space in between the start of a fiscal year – and the holiday season. For me at least, that typically means crunch time. Anyone else feeling the pressure?

I’ve got fall on the brain, and I’m reminiscing about my trip to Fredericksburg awhile back. Aaron and I talked about going this October, but we ran out of time. We might visit in the spring! Part I and Part II.

I’m hosting a virtual fundraiser for a friend who is running for office. And, believe it or not, I’ve never done a virtual fundraiser, so I’m trying to figure out what the logistics of that could look like. I’m going to spend some time on that this evening so I can really enjoy my Friday off – and completely disconnected form technology. We’ve got the initial invitation sent out, but I want to make the most of everyone’s 45 minutes – and I also don’t want it to be boring. Stay tuned.

Boot walk

The Boot Walk is coming up on November 6th. You can read all about that here, but I’m actively raising money for my team. I got a bit of a late start this year, but I’m committed to raising at least $500. Fingers crossed I can make that happen before event day.

And with that, I’ll wrap up this post. That’s just a tiny snippet of what’s been floating around in the back of my brain today, and I figured I’d share. One last thing, Aaron and I need to revisit some classic scary movies before Halloween (and by scary, I mean Hocus Pocus). What are some of the classics on your list?
